In 1995 Michael Klausen and Tony Papas opened the Bakery in the Bayswater Brasserie in Kings Cross and a Legend was born. Sydneysiders fell in love with their handmade naturally leavened bread. In 2000 Brasserie Bread became its own entity. Demand in the first year grew so rapidly that the original bakery in Waterloo was too small. The bakery in Rosebery was built resulting in a further increase in capacity and range of handmade breads, pastries and cakes.
As the Brasserie Bread legend spread it out-grew its premises once more, and at the beginning of 2005 the new wholesale bakery commenced operations at 1737 Botany Road (opposite Botany Golf Club). From its new home Brasserie Bread supplies many of Sydney's top restaurants, hotels, cafes and deli’s.
