Parameters in URL

Can I do this : <a href="[title,fallback=]&s=[surname,fallback=]">click</a>

When I tried it lost the parameters.

It's definitely possible to add on custom fields to your URL like that. How are you losing the parameters?

I had to use the cm_dontconvertlink  tag to make them work.

Would this work and get tracked for click throughs?

< a href="[customFieldName]" >

Where [customFieldName] populates with (a query string from a custom field):

I'd prefer the click throughs for the link to be tracked (even without the customised query-string value uniquly identifying them)

Yes, you could certainly do that and the field value would be inserted onto the link

Tested. Works.
I must create a fallback for "Forwarded to a friend" versions. But all good.
