I want to embed a YouTube clip into one of my emails so that it comes up as it does on YouTube or Facebook with the image of the start of the clip with a play icon over it?
Is that possible using this software?
Any help would be much appreciated.

While there are ways to do this in HTML, very few email clients will actually be able to display the video.
currently the best option for video in email is to have a single frame image that links through to the video on YouTube or Facebook.

A good fallback or alternative is to use an image that looks like the video player. If the reader clicks what they think is the play button, they are hyperlinked to the real web-hosted video. It's kind of cheeky, but a forgivable 'hiccup' providing you dish up the video they obviously wanted to watch. You'll get a great click rate too...
